Fave e Cicorie
• 1 pkg of frozen broad beans ( fave ) • 2 bunches of chicory (cicoria) • 1 clove of garlic
• salt • pepper
Cook frozen Fava beans in boiling salted water until extremely tender. While this is a bothersome step, it’s well worth the effort: squeeze the flesh of each bean out of its skin. Discard skins. Puree the beans. Set aside.
Boil the chicory in salted water, drain, chop coarsely. In a pan, heat two tablespoons of olive oil, add the garlic, ( and a hot chili if you like spicy), let it brown, then remove it. Sautee the chicory in the oil to flavor. Heat the pureed beans, and adjust the salt.
Plate by adding first the chicory and then topping it with the bean puree. Drizzle all with EVO and a sprinkling of pepper.
A true Lucanian dish!
